What should I make for Christmas?

For the millions of middle class Filipinos, like I am, this is that time of the year when we start planning Christmas dinner. I like the simplicity of planning food. It is this aspect of my life which makes me consider the possibility of settling down and wanting family. (Except I do not like kids, but I guess that is for another story.)

For the past Christmases, I have been making dessert. Truffles,  pies, pudding, gelees and random assortments which I feel like making. I would like to think that I can make really good desserts. In fact, I have mastered making truffles I think I can make them while I am half-asslep.

Oreo truffles are my specialty. I have a truffle recipe in my blog somewhere.

I come from a very tight family who celebrate holidays together. I have been raised to believe that a celebration should always have a seat-down meal.There are 4 of us in our family, we each provide 2 dishes per holiday meal (for Noche Buena and Media Noche). For Christmas, I am tasked to make the carb meal and the dessert.

I am going to make paella for the carb meal cause paella is festive and we make pasta too often. For the dessert, I was wondering whether I should make ice cream terrine (or a variation of ice cream cake) or chocolate marshmallow pie.

Both are easy to make even judging from the photo recipe. My brother is voting for ice cream terrine. I like marshmallows. So at this point, I am still asking myself the question on what should I make for Christmas.
